The Best Oatmeal Cookies

It has been a crazy week here in the Rex house. I can't even put my finger on why because we are in lockdown.
Luke and I knocked out an amazing batch of oatmeal cookies yesterday from my Better Home and Gardens cookbook that I received when I moved out 16 years ago. It's easy, quick and requires minimal clean up. 3 great reasons why this is a perfect recipe to make with kids! And don't be fooled oatmeal cookies are still very cool, hip and trendy!
I won't leave you with a long explanation about these cookies because the will speak for themselves and plus its Friday!
The Best Oatmeal Cookies

Prep Time: 25 Minutes
Bake: 8 minutes per Batch
Oven: 375 Degrees F
Makes: about 48 cookies
Ingredients
3/4 cup butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp ground cinnamon
2 eggs
1 tsp vanilla
1 3/4 cup all-purpose flour
2 cups of rolled oats
I would also like to note I tripled the amount of cinnamon I added to my cookies. You can never have enough cinnamon!
Directions:
In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, granulated sugar, baking powder, baking soda, and cinnamon . Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in rolled oats.
Drop dough by round TSP 2 inches apart onto uncreased cookie sheet. Bake at 375 for 8-10 minutes, or until edges are golden. Note: I Made my cookies a lot larger and managed to get 26 from the batch.
There are tons of different items to add to oatmeal cookies if they need a little jazzing up such as - chocolate chips, raisins, Reese chips, nuts or coconut!
